- ÍtemOptimización de la cantidad de muestras para el análisis microbiológico de cortes en una planta de beneficio y desposte basado en los datos históricos del proceso y en la metodología de muestreo de aceptación por atributos.Yánez Ayala, Sandra Milena.; Gallego Torres, Adriana Patricia.; Gonzalez Veloza, Jose Jhon FredyThe number of samples required to monitor the behavior was determined microbiological in cuts of bovines and pigs in a Processing and Slaughter Plant, adapting the methodology of the acceptance sampling by attributes, taking the values of AQL (Acceptable Quality Level) and RQL (Rejectable Quality Level) from the interval of confidence of the proportion of non-compliant or absences obtained from the sampling microbiological of the years 2018 and 2019 for each species, such interval was estimated with a 98% confidence level. Producer risk (α) and consumer risk were taken (β) of 5%. Under the study conditions it was found that it is possible to reduce the sampling in this plant between 54% and 74% for pig cuts, and between 50% and 60% for cuts of older cattle, according to the microorganism under study.
