This type of consumer can be strict vegetarians, lactovegetarians, Ovo vegetarians, Ovolactovegetarians, Slow Food, Celiacs, Diabetics or obese. In relation to the above, in order to meet the proposed objectives, the study was carried out in four stages that together allow developing the design of the management model in the value chain, through electronic commerce, and thus being able to satisfy The needs of alternative consumers. The first corresponds to the identification of habits, the second to the analysis of the behaviors and needs of alternative consumers, for which a sample of convenience was applied, and in the same way surveys were conducted to producers in order to find relevant components and check if electronic commerce is an appropriate channel to manage the value chain between suppliers, producers and logistics operator; The third includes the study of variables and parameters that must be taken into account in order to develop the model, for which the methodology of the Canvas was based.
