- ÍtemCaracterización de leche cruda en municipios de Cundinamarca y análisis del efecto de condiciones climatológicas y de temperatura de almacenamiento en los resultados obtenidos de laboratorio(Fundación Universitaria Los Libertadores. Sede Bogotá., ) Malaver Vecino, Carlos Arturo; Gallego Torres, Adriana PatriciaFor the dairy industry, it is of great importance to monitor the behavior of the physicochemical and microbiological characteristics related to the quality of milk supplied by each livestock supplier, in this sense, the quality control carried out by the company at the first link in the production chain is important, which consists in carrying out periodic samplings to each cattle herd, in order to characterize the acquired milk based on the laboratory results obtained, however, to complement the characterization and quality control, it is proposed to add the application of statistical analysis where the effect of weather conditions and storage temperature is evidenced in the variables associated with determining the quality of milk (% Fat, % Protein, % TS (Total Solids),% NGS (Non-Fat Solids) and Microbiology (mesophiles UFC / mL ), in addition, the grouping of providers according to laboratory results is also proposed and in this way can predict their behavior related to the quality of milk. For the development of the research, a comparison of medians is made by means of the Kruskal test, analysis of main components and cluster is also carried out, it was possible to identify that external conditions such as storage temperature in herd and weather station have an effect on the associated variables with the quality of milk, likewise, defined groups of suppliers were identified according to physicochemical and microbiological characteristics.
