En nuestro país la cocina tradicional se considera como uno de los pilares del Patrimonio Cultural Inmaterial de la Nación. Esta es una expresión de la cultura que da cuenta de la historia de un pueblo o comunidad, es la expresión de la comprensión y la relación con el entorno ecológico que se expresa en el saber tradicional del uso de los recursos para la preparación de alimentos y constituye parte fundamental de la identidad de los pueblos y comunidades. Este reconocimiento no solo ayuda a valorar las recetas y técnicas culinarias, sino también la forma en que la gastronomía refleja la identidad, historia y tradiciones de una comida. En el caso de la gastronomía cartagenera, se convierte así en un testimonio tangible de la diversidad cultural y la fusión de influencias que han dado forma a la ciudad a lo largo del tiempo. Desde platos icónicos como la arepa de huevo o la carimañola, hasta preparaciones específicas como la carne en posta y más, resaltan los ingredientes autóctonos de la ciudad y cada elemento de la gastronomía local contribuye a la narrativa, ampliando así la cultura cartagenera. No obstante, en la era digital, la transmisión de estos saberes culinarios enfrenta nuevos desafíos.

In the case of Cartagena's gastronomy, it thus becomes a tangible testimony to the cultural diversity and fusion of influences that have shaped the city over time. From iconic dishes such as arepa de huevo or carimañola, to specific preparations such as carne en posta and more, they highlight the city's indigenous ingredients and each element of local gastronomy contributes to the narrative, thus expanding Cartagena's culture.
