Despite this, it was possible to highlight aspects negatives such as lack of promotion, low investment, abandonment of attractions, tourist signage non-existent and, above all, access roads in precarious conditions.
- ÍtemEl ají, una visión interdisciplinaria. Diferentes perspectivas de este alimento que unen a América(2024) Fundación Universitaria Los Libertadores; Cote Daza, Sandra Patricia; Moncayo Martínez, Diana CristinaEl ají es un alimento que se consume ancestralmente y que tiene usos en la gastronomía, medicina, elementos culturales, entre otros. El uso de este alimento une a Colombia con varias naciones latinoamericanas. A partir del interés conjunto en conocer aspectos del ají distintos al de la gastronomía se plantea el presente libro, que se divide en cuatro partes y nueve capítulos. Las generalidades del ají se exponen en la primera parte, seguido por la narración del ají en Latinoamérica en el capítulo 2, en donde se presentan las características de su uso según cada país; para luego pasar al capítulo 3, en donde expertos oriundos de México y Perú narran su visión de este alimento. El relato mexicano se hace a partir de una recopilación de escritos que identifican elementos antropológicos del mismo, reconociendo el papel de este alimento en las culturas indígenas antes de la llegada de los conquistadores y, a su vez, describe generalidades del cultivo, variedades antes de referirse a su uso en la industria cosmética, medicinal y gastronómica en diez países del continente.

- ÍtemDiagnóstico de emprendedores en una zona de post-acuerdo: (Putumayo) en Colombia(2019) Cote Daza, Sandra Patricia; Barón Chivara, Jesus Alexis; Cote Daza, Sandra Patricia [0000-0002-3910-8081]; Barón Chivara, Jesus Alexis [0000-0002-3910-8081]A partir de la participación en la Tercera Macrorrueda para la Reconciliación en el Putumayo (departamento de Colombia) se identificaron diversas necesidades de las regiones en las áreas de producción, manejo de la contabilidad, desarrollo de marca, estrategias de mercadeo y fidelización de los clientes, entre otras, las cuales se presentan debido a condiciones como las largas distancias hasta las ciudades principales, dificultad de acceso a capacitaciones, o pocas oportunidades para mejorar el desarrollo de actividades en conjunto con entes gubernamentales, etcétera, lo que dificulta el desarrollo de las labores de los emprendedores. Teniendo en cuenta estos elementos, desde octubre del año 2018 hasta mayo de 2019, se planteó la iniciativa de interrelación entre la academia y los emprendedores de una región emergente acompañando y asesorando a las empresas. Para el desarrollo de la investigación se implementó la metodología investigación-acción en la cual se identificó la problemática y se elaboró un plan de trabajo para el fortalecimiento de los emprendedores. Inicialmente se evaluó el estado de las habilidades blandas de estos y se caracterizaron los emprendimientos. Los resultados se obtuvieron a partir de visitas al departamento de Putumayo y la aplicación de estos instrumentos.

The foregoing has generated certain environmental and social problems without any response or solution from national organizations.

Sede Bogotá., ) Pardo Hernández, Angie Carolina; Cote Daza, Sandra PatriciaThis work was intended to raise awareness of the importance of gastronomy in the Caribbean Region at a cultural historical level according to the development of its traditions and wisdoms, these are used in the preparation of some typical dishes; For this, a bibliographic review was carried out and an analysis was generated that detailed the way in which gastronomy unfolds and the impact it has on the population. Precisely and in relation to the above, a proposal was created at the gastronomic level, which in turn allowed to open a stage in the industrialization of typical food; in this way the standardization of a typical soup of the Caribbean region was made based on by-products of the Oncorhynchus mykiss trout, through the continuity of the literature review; similarly, one of the most used recipes by the Caribbean with tails or fish heads was selected and adapted. In the same way a series of prototypes of soups with the specific characteristics was elaborated, to then be vacuum packed and generate a process of conservation of the same in several periods that contemplate from 0 to 30 days. This contribution is linked to the social problem of hunger that exists in Colombia and emphatically in the Caribbean region, when producing these typical soups, it is sought to take advantage of the raw material that is usually wasted in the food industry, to extend the product's life cycle and to be able to impact the hunger problem. Thus, to finalize and taking into account the mentioned aspects, the result of the work is achieved thanks to the sensory analysis that is carried out by means of semi-trained panelists and consumer panelists, who determined the different representative variables of a trout by-product soup and the product acceptance.

This research work focuses on determining how literature influences the strengthening of school coexistence Literature is considered a tool that gives students the possibility of learning dynamically, working in turn on various activities which are aimed at improving their environment and surroundings. The center of this research work is to know how much literature influences the contribution and strengthening of the school environment in the 28 students of the transition grade, whose ages are between 5 and 6 years of the Institución Educativa Alfredo Bonilla Montaño that is in the municipality of Jamundí, to the southwest of the department del Valle del Cauca. The purpose of this research has been to design a pedagogical tool focused on recreational activities to improve, through children's reading, the coexistence of students within the classroom. This was carried out under the qualitative method, to solve the difficulties regarding the improvement of coexistence in the students that make up the sample; Playful activities that are part of the proposal are described: School coexistence, we are going to improve These activities were designed under the action-research methodology, which allows understanding and solving the problems raised, posing in turn, the way to do intervention in the group of students inside and outside the classroom. The approach used was made seeking the development of an inductive method, which allows the observation of the facts within the educational institution for their registration; the classification and study of these facts; the inductive derivation that starts from the facts and allows us to reach a generalization; and the contrast, to later draw the own conclusions. It is necessary for the implementation of this strategy in favor of school coexistence, to link the families of the students, with the intention of making a sum of efforts, achieving a joint work that achieves in the students the process of change in the behavioral attitude and the improvement in the school environment. When analyzing the influence of literature on school coexistence in students, direct observation techniques were implemented, which allows to record in an organized way the advances that are registered visually, analyzing, and explaining the observed facts of the objects under study; and the Analysis Log, which allows the reflection of the researcher immersed in the proposal and from there intervene in the problem in greater depth. Due to the results obtained, the intervention was carried out in the group of students, to teach them the importance of respect and empathy that should be felt for their peers, reinforcing the values and potentials of each of them, to improve the coexistence between colleagues.
